Pheasant Fajitas

A real family favourite that packs all the punches but the real secret is the homemade fajita seasoning. Sure, pre made shop bought seasonings are fine but there is a real sense of achievement when you make it yourself. Try the recipe below for a lipsmacking fajita seasoning:


Serves 4

Prep time: 5 mins

Cook time: 10 mins


You will need:

10 pheasant breasts, sliced thin

2 bell peppers, sliced thin

1 onion, cubed

Pomora Al Peperoncino Oil

Tortilla wraps

Salsa

Creme Fraiche

Lettuce, shredded

Cheese, grated


For the seasoning

2 tbsp smoked paprika

1/2 tbsp chilli powder

1/2 tbsp chipotle chilli powder

1/2 tbsp ground coriander

1 tbsp garlic powder

2 tbsp ground cumin

1 tbsp ground oregano

1 tsp salt


Method

To make your seasoning, add all of the components in a small bowl or cup and mix then set aside.


Prepare your pheasant breasts by slicing them lengthways into long strips. Add them to a frying pan with your Pomora Al Peperoncino Oil and brown the meat over a medium heat.


As the pheasant cooks, slice your peppers and cube your onion then add them to the pan, let them sweat for a couple of minutes. Pour over some of the seasoning, stir thoroughly and add a splash of water.

Reduce the heat and gently simmer, stirring occasionally and adding more seasoning depending how flavoursome you want the dish to be.


Once cooked, serve with tortillas, shredded lettuce, salsa, creme fraiche and grated cheese.
