Herb Crusted Partridge

In this day and age, trying to get that work life balance right can be tricky. Long days at work and time spent taking your kids to their classes can meanespecially when it comes to family dinners but with a spare 20 minutes, this meal is delicious and healthy.

What’s even better, my wife made this and my children devoured them.

Simple, healthy and sustainable....let’s get to this:

Herb Crusted Partridge (4 servings)

Prep time: 5 minutes

Cooking time: 15 minutes

You will need:

12 Partridge Breasts

30g Panko breadcrumbs

Glug of oil

1 tbsp of mixed herbs




Preheat your oven to 180c.

In an oven proof dish, place your breasts evenly and spread a generous dollop of mayonnaise on each breast.

In a bowl, mix your panko breadcrumbs, herbs and olive oil.

Spoon the crumb mix on top and season with salt/pepper then place in the oven and cook for 15 minutes.

Serve with sides of choice. I opted for tenderstem broccoli and crispy potato slices because my kids love them.
